Rainbow Veggie Sandwich

Ingredients

  • 4 slices Old Tyme Honey Wheat Bread
  • 1/4 cup prepared hummus
  • 1 beefsteak tomato, sliced thick
  • 1/2 cucumber, sliced thin
  • 1/2 cup shredded carrots
  • 1 yellow bell pepper, sliced thin
  • 1 avocado, peeled, seeded, sliced thin
  • 1/2 cup shredded purple cabbage

Instructions

  1. Spread 2 tablespoons hummus onto 2 slices of bread.
  2. Top both slices with a layer of tomato, cucumber, carrot, bell pepper, avocado, and cabbage.
  3. Top both sandwiches with remaining slices of bread. Slice in half and serve.
